Ryan's knew what was good for him

when he came home and whipped up this for dinner. He made it up after being inspired from some sort of breakfast sandwich he got at work.

This is the perfect summer dinner if you want something light and not hot. We don't have AC here, and while it is not hot enough for it most days, some days it is just a little too hot for standing over a stove.

It is my new easy dinner night meal...and our favorite after church lunch. I like to call them Ryan's Mozzarella Sanwiches.

What? All this hype for a sandwich? In the words of my crazy little brother, "Don't knock it 'til you try it!" Although he was definitely NOT talking about a sandwich.

Moving on...

What you need:
*a loaf of any fresh bread you can find (we use an onion flavored Ciabatta).
*fresh whole mozerella sliced (it costs 60 cents here, I know it can be a little pricier at home but just check).
*one tomato sliced
*Arugula (English) or Rucola (German)
*olive oil
*balsamic vinegar
*salt and pepper

Just a quick note: All of these ingredients are cheap and readily available here. I have never made this at home, but I think you can get just about all of this stuff there.



I love Arugula! It is the only salad type thing I will eat. That sounds really sad now that I type that out.



I also want to apologize for the quality of these pictures. Blah...

Step 1: Set the oven to 150 and pop the bread in for 5 minutes. I like the bread still a little soft, so just adjust to what you like.



Step 2: While the bread is in the oven, start slicing up the tomatoes and mozzarella.





Step 3: Take the bread out and slice it in half lengthwise. Sprinkle with a little salt and pepper.



Step 4: Drizzle a little bit of balsamic vinegar on it.



Step 5: Now, drizzle some olive oil on it.



I love me some olive oil. Remember when I talked about drinking it? I wasn't kidding!



Step 6: Put some Arugula on it.



Step 7: Now add some of your tomatoes.



Step 8: Some cheese please! Ryan also added a little bit more pepper.



Step 9: A little drizzle of balsamic to top it off.



Step 10: Put the top on and serve!



And that's it! 6 ingredients and 10 steps. You could also make the whole loaf and then slice it into smaller sections for an appetizer or to take to a party. Leave it to Ryan to create something so simple, but so good! The way to Laura's heart is definitely through her stomach. Well, diamonds never hurt either!

This looks soooooo yummy! If only I ate bread! This might be the next thing I go off my diet for! I remember when I studied abroad in Italy all the cheeses, even good ones, were super cheap. Only a Euro or two each. Over here I swear it's like quadruple the price. Ridiculous!
